Com o objetivo de compartilhar conhecimentos da origem e produ\u00e7\u00e3o do achocolatado e queijo minas frescal. A oficina abordou a import\u00e2ncia da t\u00e9cnica na produ\u00e7\u00e3o de achocolatado, destacando a diferen\u00e7a entre a vers\u00e3o com e sem goma xantana, al\u00e9m dos benef\u00edcios que a goma proporciona.<br \/>\nOs participantes tiveram a oportunidade de adquirir um amplo conhecimento te\u00f3rico, que os preparou para a pr\u00e1tica. Ap\u00f3s a explica\u00e7\u00e3o dos conceitos fundamentais sobre a fun\u00e7\u00e3o dos ingredientes utilizados para a produ\u00e7\u00e3o de achocolatado: soro do leite, leite pasteurizado, achocolatado em p\u00f3, a\u00e7\u00facar, espessante, goma xantana, e para o queijo minas frescal: leite pasteurizado, cloreto de c\u00e1lcio, coalho l\u00edquido e sal refinado, os alunos se dividiram em grupos para aplicar a teoria.
